MOTIVATION: A home-cooked meal.
Thanks to Melissa’s CSA, I was presented with a giant bag of even gianter spinach this weekend to do with what I wished (think the typical Baby Spinach you buy in the store—and then multiply the size of those leaves by like, a bajillion). So in it all went into a pan of olive oil, marinated garlic, balsamic vinegar-infused petite onions and marinated artichoke hearts. The only thing more shocking than how little it all got once cooked, was how delicious and filling it was!
While I didn’t make the yumminess pictured, it looks almost as home cooked and delicious. Recipe linked below.
